Ingredients:
- 1 (4.9 oz.) pkg
Hungry Jack® Four Cheese Potatoes
- 2 tbsps butter or margarine
- 2 cups boiling water
- 2/3 cup milk
- 1/2 cup sour cream
- 2 cups cubed, cooked chicken
- 2 cups frozen broccoli florets
- 4 oz. (1 cup) shredded Cheddar cheese
Directions:
1. HEAT oven to 400°F. In ungreased 2 to 2 1/2-quart casserole, combine potato slices, contents of sauce packet from potatoes, butter and boiling water. Mix well. Stir in milk and sour cream. Add chicken, broccoli and 3/4 cup of the cheese. Stir gently to mix.
2. BAKE for 30 to 40 minutes or until bubbly and slightly thickened.
3. SPRINKLE with remaining 1/4 cup cheese. Bake an additional 8 to 12 minutes or until potatoes are tender. Let stand 5 minutes before serving to thicken sauce.
TIP Serve this creamy one-dish meal with fresh fruit for dessert, if desired.
