Ingredients:
Apple Mixture
- 1/4 cup butter or margarine
- 1 1/2 cups thinly sliced, peeled apples
- 1/2 cup light brown sugar, packed
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup currants or raisins, optional
Pancakes
- 1 cup
Hungry Jack® Buttermilk Complete Pancake & Waffle Mix (Just Add Water)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 3/4 cup water
- 1 tsp vanilla extract
Directions:
1. Heat butter or margarine in a 9 inch microwave safe pan on High for 30-45 seconds or until melted. Stir in apples, brown sugar, cinnamon and nutmeg. Cover with plastic wrap; cook on High for 3-4 minutes or until apples are tender. Sprinkle currants over apples, if desired.
2. Whisk pancake mix, cinnamon, nutmeg, water and vanilla in a medium bowl; blend well. Pour batter evenly over cooked apples.
3. Cook pancake on High for 4-6 minutes or until toothpick inserted 2 inches from edge comes out clean. Let pancake stand 5 minutes. Invert onto serving plate. Cut into wedges to serve. Serve warm with ice cream, if desired.
