Ingredients:

Crisco® Original No-Stick Cooking Spray
- 2 cups
Hungry Jack® Mashed Potatoes
- 2 cups water
- 3/4 cup milk
- 1/2 tsp salt
- 4 tbsps butter or margarine
- 1/2 medium red bell pepper, finely chopped
- 6 green onions, thinly sliced
- 1/2 cup chopped fresh cilantro
- 1 large egg, slightly beaten
- 3/4 cup shredded Monterey Jack cheese
Directions:
1. HEAT oven to 350°F. Spray a 9-inch glass pie pan with no-stick spray. Prepare potatoes as directed on package using potato flakes, water, milk, salt and 3 tablespoons butter.
2. MELT 1 tablespoon butter in medium skillet over medium heat. Add pepper, onions and cilantro. Cook 3 minutes or until tender, stirring occasionally.
3. ADD vegetable mixture to potatoes. Stir in egg and 1/2 cup cheese. Spoon into prepared pan. Spread evenly. Sprinkle with 1/4 cup cheese.
4. BAKE for 18 to 25 minutes or until potatoes are thoroughly heated and edges begin to look dry.
