Question: What should I do with leftover batter?
Answer: Store leftover batter in a sealed container and freeze for up to one week. Thaw batter in the refrigerator. Be sure to stir before cooking.
Question: How should I keep my pancakes and waffles warm?
Answer:Place (do not stack) pancakes or waffles on an ovenproof platter or baking sheet in a 200° F. oven for 15 to 20 minutes.
Question: What is the best way to store leftover pancakes and waffles?
Answer: For best results, wrap cooled pancakes or waffles in plastic wrap and place in an airtight bag. Store in the freezer. It is easer to remove individual pancakes if you separate them with waxed paper or foil before freezing.

To reheat pancakes, stack two-to-three pancakes on a microwave-safe plate and microwave on HIGH for 60 to 90 seconds.

To reheat waffles, toast one cycle in a toaster on medium setting or microwave on high for 60-90 seconds.
Question: How do I know when my griddle is preheated to the right temperature?
Answer: Drop a very small amount of water on the hot surface. If it sizzles and evaporates within a few seconds, the griddle is ready.
Question:How can I get my pancakes to be the same size?
Answer:A measuring cup works best. Approximately 1/4 cup batter makes a four-inch pancake.
Question: Why do my pancakes stick to the griddle?
Answer: Make sure your griddle is the proper temperature. After the griddle has been preheated, brush it with a thin layer of vegetable oil. Do not use butter or margarine to grease your griddle or your pancakes may burn.
Question: What additional ingredients can I mix into my pancake batter?
Answer: For tempting variety, stir in one or more of the following ingredients: fresh or frozen blueberries, chopped apples, diced peaches, nuts, applesauce, or chocolate chips. (Use about 1/4 cup for every 1 cup of pancake mix.)
Question: How do I know when waffles are done baking?
Answer: Some waffle irons have a light indicator that blinks or turns on or off when the waffle is done. If it doesn't, waffles should be done when the steam stops escaping from the sides of the waffle iron.
Question: Why do my waffles have a tough texture?
Answer: Over-mixing batter will produce waffles with tougher texture. Mix the batter just until all ingredients are blended. Batter should still have some lumps.
Question: Can I substitute buttermilk for milk or water when mixing my batter?
Answer: Yes. But your batter will be a little thicker. Just add a little extra buttermilk to get the consistency you want.

A quick and easy way to make buttermilk is to add 1 tablespoon vinegar or lemon juice to 1 cup milk. Another option is to keep powdered buttermilk in your pantry. In most supermarkets, you'll find it near canned and powdered milk.
Question: Is it necessary to grease waffle irons?
Answer: No. Most modern waffle irons have a nonstick surface. If your waffles stick, lightly spray waffle iron with nonstick spray before heating.
